Whether it’s referred to as Champagne or sparkling wine, the best of these wines are made in the Méthode Champenoise style.

Following fermentation, still wine is bottled and a small amount of liqueur de tirage (a wine solution of sugar and yeast) is added, triggering what is known as the secondary fermentation. This secondary fermentation takes place inside the bottle, producing both the carbon dioxide (bubbles) and spent yeast cells. The bottles are stored in a temperature and light controlled environment for a minimum of 18 to 24 months. 

The bottles are riddled (gradually tilting the bottle from a horizontal position to a vertical one, so as to allow the spent yeast cells to fall into the neck of the bottle), which takes one to two weeks. The neck of the bottle is frozen and the yeast plug is disgorged, after which bottles receive a cork, wire hood and are on their way to you! After spending all of that time in a cool, dark environment, the end result is high quality sparkling wine that will captivate the senses and delight your palate.
